IMMUNE BOOSTING VEGETABLE SOUP

Immune Soup

I love soup.  It’s almost embarrassing the amount of time that I dedicate to thinking about, talking, and consuming soup. In my last conversation with my mother, I spent nearly 20 minutes excitedly jabbering about how it was finally soup season.  To me, soup is the ultimate meal because it is versatile, usually easy to make, and can be easily stored. The possibilities are endless.

I tend to get colds rather easily, especially in the Fall and Winter. And this year had been no exception. The only change is that I am now gripped with the extreme anxiety that I have somehow, in some way, contracted Coronavirus. Despite my obedient mask wearing and frantic hand washing and minimal trips outside,  any hint of a sore throat or stuffy nose, sends me spiraling. Hence why this has become my go-to, cold-banishing, feel-good soup.

This soup is spicy, fragrant, and healthy, packed with sinus clearing ginger and tons of vegetables for health. It’s also easy to make and can be stored for up to a week in the fridge and a month in the freezer. A perfect hearty meal or even quick snack, if you are feeling cold.  Feel free to sub any vegetables you have on hand and substitute the pasta for your favorite grain.

Ingredients

2 tbsp. olive oil

1 medium yellow onion, diced

1 cup chopped carrots

1 cup chopped celery

2 cloves minced garlic

1 tbsp. chopped ginger

1 tsp dried thyme

1 tbsp soy sauce

2 tbsp apple cider vinegar

4 cups vegetable broth

2 cups water

1 cup chopped kale

1 cup Cellentani pasta or grain of choice

salt and pepper to taste

Heat olive oil in a large Dutch oven or stockpot. Add onions, carrots, and celery on medium heat, stirring occasionally, until the veggies are soft, about 5 minutes.  Add in chopped ginger and garlic and cook for another 5 minutes.

Add in thyme, soy sauce, and vinegar and allow to cook for another 2 minutes. Add broth and water and bring to a boil. Once soup is boiling, add in kale and pasta, cover and reduce to a simmer.  Allow soup to simmer for about 20 minutes or until pasta is cooked through. Remove from heat and add salt and pepper to taste.
